Toru Road Vegan Kale & Kawakawa Pesto
Kale that actually tastes great! The base is raw kale with sunflower seeds and the added earthiness of kawakawa/bush pesto. Its the first of our kai that incorporates our own indigenous ingredient of kawakawa. A coarsely made pesto (at the request of Tracey's son Keenau to "make it more meaty" - even though he's vegan!)

The Queen of Greens! Kale is a fibrous leafy green high in iron, vitamins A, C, K1, K2, calcium and antioxidants. Kale is known to aid digestion and plays a vital role in fighting inflammation.
Kawakawa/bush pesto is found in the low lying coastal areas of NZ and can be identified by its pretty heart shaped leaves. Like Kale, Kawakawa is also known to be useful in dealing with conditions of the digestive tract, for inflammation, and as a anti-microbial herb.
It has a calming effect on the stomach for those suffering from cramps and bloating as it assists in moving trapped wind. Kawakawa can aid in the reduction of inflammation which can help with arthritis and improve circulation.
As an anti-microbial herb Kawakawa has the ability to kill bugs, so it is great for treating infections. Chew some as a pain reliever for sore teeth, for coughs, or use as an antiseptic - it's also great for headaches.
The leaves with caterpillar holes are the best, they indicate that they are safe to eat. (E kai ana ngā rau kawakawa i kai ngia ngā anuhe, koira ngā rau haumaru mō te tangata).
